A New Twist on Jambalaya

Here is a recipe I got from a friend.  It's a new take on Jambalaya, I'd say it's tomato based.  Enjoy!

Layer into crock pot:

1 cup chopped celery
1 chopped onion
1 chopped bell pepper
1 can diced petite tomatoes with juices
1 small can tomato paste (drop in spoonfuls all over)
1 can red beans, drained and rinsed
1 cup chicken stock
1 lb andouille sausage (I just used smoked sausage because I didn't know what "andouille" was.)
1 lb chicken, cubed (I seared the chicken and shredded it into the crockpot.)
1 clove grated garlic
1 Tbsp Cajun Seasoning
2 bay leaves

Cook all day on low, or 4 hours on high.  During the last 30 minutes of cooking, take out the 2 bay leaves and stir in:
1 lb shrimp (optional - I did the chicken and sausage above and it was enough for us.)
2 cups instant brown rice (I cooked 2 cups of rice in my rice cooker then added it into the crockpot at the end...turned out great.)
